Cubes of pork belly braised slowly in soy sauce, sugar, and wine until meltingly tender and glossy. A Hangzhou specialty. Each cube is tied with kitchen string so it holds its square shape through the long cooking, and the dish is braised and then steamed so the fat turns translucent without falling apart. It is named after the Song dynasty poet Su Dongpo, who is credited with the recipe.
