A clarified, caramel-hued cashew-fruit juice from northeastern Brazil, lightly sweet and served chilled. It is made from the cashew apple, the soft fruit attached to the nut, which is too delicate to ship and so is drunk locally. The juice is filtered until clear, then heated, and that heating is what turns it from pale yellow to its amber color. Piauí is the state most associated with it.
